Minted peas

Ingredients:

  • 600 g peas (frozen can be used)
  • 2 fresh onions or shallots
  • 1 tomato
  • 8 mint leaves
  • Salt 
  • Pepper
  • White wine
  • 2 spoons of virgin olive oil

Method:

Boil the peas with a pinch of salt for 15 minutes. Finely chop the fresh onions and brown them in a pan with olive oil. Chop the tomato and add it to the onion.

Drain the peas and season with salt and pepper. Add them to the tomato and cook everything on a low heat for 10 minutes, with a touch of white wine.

When the peas are cooked, chop the mint leaves and add them when serving.
