‘Mercats de forquilla’ is here: The series of cooking demonstrations with local cuisine and values

Six sessions throughout the year to discover local recipes with award-winning chefs and taste sustainable Catalan cuisine.

To mark the ‘Catalonia, World Gastronomy Region 2025’ award, Barcelona is hosting the ‘Mercats de forquilla’ series: six cooking demonstrations across the year that raise the profile of sustainable, traditional and innovative Catalan cuisine.

The project involves participation from restaurants that have won the Barcelona Restaurant Awards, and they will put on live sessions showing how to prepare recipes that bring together local products and modern techniques. Each session will be led by a food journalist or educator, who will guide the audience and focus on values like sustainability, the Mediterranean diet and ingredient traceability.

All attendees will be provided with the written recipe, featuring details of the necessary ingredients and the preparation process. At a later date, all the recipes will be brought together as a collection so that anyone can consult them at home.

‘Seafood: From the port to the plate’ with Terraza Martínez

The first cooking demonstration will take place on 17 May at Mercat de Provençals, as part of the Little Market of Markets fair, with Terraza Martínez as the star of the show.

Its food director, Juanba Agreda, will cook two recipes that combine fresh products from the garden and from the seafood market: white asparagus from Gavà with a shellfish salpicon and Mediterranean mussels with burnt garlic. Also participating in the activity will be the restaurant’s trusted suppliers, who will talk about their first-hand experience of the local fishing sector.

Attendees will be able to follow the process step by step and find out all the secrets of a cuisine that is honest, flavourful and respectful of the environment.
